It was explained that one remembers things that can save their life. It seems like Tanjirou just quickly summarized all the experiences they had in his story. By the time Yoriichi left, he had already taught the breathing forms and dance to Sumiyoshi since Sumiyoshi was telling Yoriichi that he would pass those down along with the ear ornaments to his children and future generations. So, yeah. Sumiyoshi did indeed have crazy vision, but he was also taught how to do everything so perfectly.
