This is something that will never not bother me. In this manga the ship and series title are "Edens Zero". For those whom English may not be your first language this sounds really weird because Edens is the plural of Eden, which can be either an individual name or a term for paradise.

So really it should be called "Eden Zero" or "Eden's Zero" right? So why is it "Edens Zero" and what does that mean? Anybody have a guess?

It literally says what it means in the manga. You might need to reread.

Ether Drive Eternal Navigation Ship Zero
EDENS Zero

Ether Drive Eternal Navigation Ship One
EDENS One

It's the abbreviation of the ships full name.

What chapter was this? I legitimately missed that.

To be honest, series' name was originally "Eden's Zero" CLICK, CLICK and was changed to "Edens Zero" ca. a month before release. So most likely the name has a different origin, but was later reworked to be an acronym.
