Ok, this place has a lot of talented and/or enthusiastic cooks and it's common to see people sharing their meal results, recipes, tips, and etc, in many MH threads (or other kinds of hangouts).
We should start recording those! Here's what I propose:
- Whenever someone comes up with a recipe, it could be posted here. I mean, maybe the person didn't "invent" the recipe per se, but just loves it, or added his/her own touch, it can be anything you're passionate about!
- I can typeset it into a cook book page to organize it all in a digital place.
- With a categorized summary (by author, origin, recipe or tip type, you name it!0), people can start checking the published book whenever they want an inspiration to cook - or just replicate something they saw as delicious.
- You can provide any info about your recipe/tip: pictures, tutorial videos links, etc. All can be added to the book.
- Considering the content will be in English, feel free to ask others to fix your material if you're not a native in... wtv speaks English.
- People can also comment on the recipes/tips, make suggestions, solve doubts, etc.
I'll keep this post stickied and updated with the book whenever there's a new addition to it.

Grilled Sandwich

take two slices of bread, smear some butter on both sides

then, from bottom to top, chicken filet, cheddar cheese, thin slices of tomato, cucumber and small bits of red onion. add some light sprinkles of pepper. stack other bread on top of this, put it in the grilled sandwich maker and enjoy this culinary master piece

Random shit found in the fridge duck
Put just enough butter in the pot for it to be healthy
Chop some ginger, some garlic and some salad onions - and fry till brown
Chop some carrots (the knobblier the better) and add to the pot - fry till begin to get soft, then add a little red wine, apple vinegar and soy sauce.
Put lid on and put in oven at 180 degrees C.
Make sure to take fillet out of fridge nice and early, so it can reach room temperature before cooking.
Cut some slits in the skin of the fillet.
Season the duck fillet with smoked salt and a little pepper - wait a good 10 mins for the salt to get to work.
Add a little oil to the pan and heat at the highest temperature.
Heat more

Is it hot enough? If not, go back 2 steps.
Add duck skin-side down, it should instantly begin to spit.
Wait till skin crispy before flipping duck.
Once flipped, keep moving so that all sides are sealed (but make sure not to actually finish cooking the duck [it has to be raw inside]).
Take duck out of pan.

Roughly chop skin off an unwaxed lemon - then roughly chop up skin.
Add to duck-free pan and fry in ducky goodness, till nice and crispy.
Chop up the inside of the lemon, as well as some celery. The chicory doesn't need chopping.

Take pot out of oven.
Take lid off pot.
Put lemon, celery, the chicory, some chilies and some herbs into the pot.
Put duck on top of vegetables.
Put fried lemon skin ontop of duck.
Deglaze pan with some ponzu, followed with a tiny amount of water - and add this to the pot
Add some duck stock (as with most stocks, better to make your own), some pepper and salt, and a little more soy sauce (if needed), to the pot.
Put pot back in oven for around 20 minutes or so.

Now you have a little time to do some important things, such as:

When timer up, take duck out of pot and mix vegetables.
Taste the sauce and fix if required.
Put pot back in oven.
Re-heat frying pan to obscene temperatures.
Again, make sure it is as hot as you can get it before proceeding.
Put duck back in pan, skin-side down - the aim is to dry the skin out, so it can re-crisp (as it will have gotten soggy when cooking in the oven).
You don't want to further cook the duck meat, only to heat the skin (thus, the crazy hot frying pan)
When skin is crispy again, instantly remove the duck and put out of the way, skin-side up.
Using a spoon, brush a light coating of honey over the skin.
Now leave the duck the fuck alone - for at least 10 minutes (or longer, if you can stomach the wait).

You are almost there now!

Ok, veg cooked, duck cooked, now is the job of plating.

Put noodles/rice/whatever on a plate.
Put the vegetables on top of this.

Now you can chop the duck - it should be pinkish inside and juicy (if not, you done gone fucked up).

Put duck on top of vegetables, then pour some sauce (from the pot) on top of the duck.

Not wanting to be outdone... guess it's time to bring my A-game

Do you like eggs, but are not a huge fan of scrambled eggs in sandwiches?

Fret no more!

This simple, 3 step, student recipe, is bound to fix your problems.



1 - heavily grease your sandwich toaster - olive oil and butter work's for me
2 - crack in 4 eggs (or as many as fit your machine)
3 - wait, remove, eat.

Due to cooking from both sides (below and above) the white will be cooked and the yolk completely runny - even better, they now fit perfectly into a sandwich without any egg escaping from the sides!

I did, in my excitement, however, break the yolk of one of the demonstration eggs...

Next time I should ensure I am entirely calm before I decide to cook me some delectables

Top tip: don't heat the machine as hot as I did before starting - you can see the difference in egg cooking in image 2... rookie mistake

Here's a good one I pulled from the archives that's perfect for this thread.
Chocolate Lava Cake
Recipe:
  • Black Gold Dark Chocolate
  • Any kind of Whipped Cream
  • 4 Eggs (Whisked)
  • A Stick of Butter (Around 125 grams)
  • 1 1/4 /cups of Caster Sugar (Gluten Free alternatives taste great with this one too)
  • Vanilla Essence (7x Vanilla Beans boiled overnight on a low to moderate heat to get the best homemade essence).
  • 3/4 Cup of All-Purpose Flour
  • Ice Cream of any description
Method:

  1. Mix all of your dry ingredients together in a large bowl.
  2. Fold in the beaten Eggs and melted butter and Sugar.
  3. Pour your mixture into any kind of mould or tray. Ones with deep sides are preferable.
  4. Add 4 squares of Chocolate to each batch of mixture (Can add more if you want).
  5. Bake for 25-40 Minutes until a rich, dark brown. You should be able to see the chocolate oozing out from a hole in the top.
  6. Add ICe Cream and any other condiments.
  7. Enjoy!
It's an easy recipe that looks high class. Great to eat, and kind of fun too with your little chocolate volcano.

Simple shrimp skewers
Shrimp,sausage of your choice,peppers,oinion and pineapple.

Season with brown sugar and choice spices....i used blackening seasoning.
